Smoked Carne Asada Tacos

Carne Asada sits up there as one of my favorite types of Tacos. The overnight marinade adds in a bit of great citrus flavor, and if you want to really knock it out of the park, add in my pickled onions and salsa verde!

Should feed 3-5 people

Ingredients:

  • ~2lb Flank Steak

Marinade Ingredients:

  • 2 Garlic Cloves

  • 1 Blood Orange

  • 2 Limes

  • 1/2 Poblano Pepper

  • 2 Tbsp Soy Sauce

  • 2 Tsp Kosher Salt

  • 1/2 Tsp Black Pepper

  • 1/4 Cup Cilantro

  • 1 Tsp Brown Sugar

Step 1: Trim the Flank Steak

Trim anything funky off the steak, and make sure there is no silver-skin or hard fat.

Step 2: Mix up Marinade

Mince the garlic and juice the blood orange and the limes.

Combine all of the ingredients and pour over the steak. Make sure the marinade makes it to both sides.

Cover and return to fridge for 12-24 hours.

Step 3: Optional - Make Salsa Verde

Step 4: Optional - Make Pickled Onions

Step 5: Dry off surface of the steak

Remove from steak, pat dry and place back in fridge on a wire rack for 1-2 hours to keep drying


Step 6: Smoke the Steak

Smoke the steak at 180 degrees until it reaches an internal temperature of 110

Step 7: Sear the Steak

Put the steak directly on the grates of a propane/charcoal grill (a cast iron skillet will work too) and sear both sides until appx 120-125.

Remove and cover in tin foil to let the steak rest.

Step 8: Assemble Tacos

Cut the steak into 1/4 inch strips against the grain.

Assemble the tacos with salsa, pickled onions, cheese, and sour cream (or whatever you want!)
