Salsa Verde
Ingredients:
12 Tomatillos
2 Garlic Cloves
1 Tbsp Fresh Lime
1/2 Red Onion
1/2 Poblano Pepper (or Jalapeno or Chili)
Cilantro to taste
Salt to taste
Pepper to Taste
Step 1: Roast the Tomatillos and Garlic
Remove the outer husk from the tomatillos and give it a good washing. Take the skin off of the garlic cloves. In a large sauce pan, heat up olive oil on med-high. Add in the tomatillos and roast on one side until turning brown, then flip and repeat on other side. Quickly roast the garlic to get a little color.
Step 2: Pulse the ingredients
Add all of the ingredients to a blender and pulse until you have the desired consistency. Slowey add in salt, pepper, and cilantro until you get to the taste you want
Refrigerate to serve cold!
