Smoked Oysters
Today we are shucking and then smoking up some fresh oysters. These are amazing on salads, pasta, pizza, or even by themselves! You can buy these "smoked" oysters in a can, but I promise, doing it yourself is well worth it and you will wonder why no one ever talks about doing shellfish this way! Sound good? Step 1: Wash and shuck oysters
First step for all oysters is to give them a good bath.
Then we need to open them up. Usually im using a shucking knife, but since we are cooking these there is a much simpler way.
Preheat your grill extremely hot, and toss the oysters on. in a few seconds to a few minutes they should open right up on their own!
Step 2: Smoke the oysters
Preheat your smoker to the lowest setting you can. In my case that is 180 degrees.
Put your oysters on a slotted pan, and put into your smoker.
These will take 45min to an hour to absorb smoke, but dont overs moke them so they completely dry out!
These are now done, you can add them to pasta, pizza, or eat on their own! I like to add some olive oil and salt and toss into a pasta sauce!
