0-400 Honey Lemon Thyme Chicken Wings

Today we are trying the internet sensation that is 0-400 chicken wings on our pellet smoker. I had never tried these before on my pellet grill, but I have to say the results kinda speak for themselves - they are fantastic. Check out this recipe for some honey lemon thyme wings, and definitely give these a try! Sound good? lets get started...

Ingredients:
Chicken Wings - portioned
Kosher Salt
Olive Oil
Black Pepper
Garlic Powder

Sauce
Zest of 1 Lemon
Juice of 1/2 Lemon
2 Tsp Lemon Thyme
2 Tbsp Honey
Large drizzle of olive oil

Step 1: Wet Brine Chicken wings

Using a ratio of 1 TBSP Kosher Salt to 1 Cup of water. Wet brine the chicken wings for 24 hours

Step 2: Apply Rub

Apply whichever rub you want to use, but make sure it doesnt have any salt in it (if you wet brine your wings…which you absolutely should)

Here I applied a coat of olive oil, and then lightly covered the wings in black pepper and garlic powder

Step 3: Smoke the wings

This is where the trick comes in. Start your pellet smoker set at 400 degrees. Once it gets past the initial smoking start up, put your wings on.

Run it for 30 minutes

Flip each wing

run for another 20-40 minutes (keep watch of them towards the end so they dont burn)

Step 4:Toss your wings in your glaze

If you want to follow the honey lemon tyme recipe, combine all of the ingredients and toss onto the wings

I like to put the zest onto the smoker for 20-30 minutes to get it to dry out a bit and add some smoky flavor!
