Smoked Dr. Pepper Wings
Today we are smoking up some chicken wings on the weber kettle using the vortex! The vortex almost always ensures were going to have crispy smoky wings, but I have a few tips to ensure your wings are perfect! Now as far as flavoring, we are taking a bottle of Dr Pepper, reducing it and using that as the perfect wing sauce! These are really good, and I highly recommend you give it a try! Sound good? Step 1: Wet Brine the Wings
Using a ratio of 1 Cup water to 1 Tbsp Kosher Salt, Completely cover the wings in a ziplock and leave in fridge overnight
Step 2: Trim the Wings
Take the wings out of the ziplock and completely rinse them and then pat them dry
Using a sharp knife, separate the flats, drums, and tips
Step 3: Rub down the Wings
Lightly coat both sides of the wings in a layer of olive oil, and then lightly apply garlic powder and black pepper
Move wings to fridge uncovered for an hour or so to dry out
Step 4: Smoke the wings
Time to smoke your wings. on the pellet grill, the 0-400 method works great.
For the weber kettle, I love using the vortex.
You can absolutely fry these off as well!
Step 5: Make the Wings Sauce
Combine ingredients
Put onto stove and simmer until reduced by half
Step 6: Sauce the wings
Put the wings into a bowl and coat them in the wing sauce
toss around to evenly coat
let them sit for a few minutes to really get that sticky glaze
