Pork Souvlaki Skewer Gyros

Today we are embracing some Greek food, and making some Gyros! Instead of making a meatloaf or chicken, I wanted to do some pork, and the results are incredible! Pork Souvlaki has a ton of herbs and flavor, and doing it on a smoker adds in another flavor profile that really brings it all together! Top it off with some fresh tomatos, a warm pita, raw red onion, and my home-made Tzatziki, and this is a fantastic meal! I am cooking this on my Grilla Pellet Smoker, but the methodology will work on any smoker! Lets get started...

Ingredients:
~1.5lb Pork Tenderloin
3 Tbsp Red Wine Vinegar
1/4 Cup Olive Oil
1.5 Tsp Kosher Salt
3 Cloves Smashed Garlic
2 Tsp Oregano
1/2 Tbsp Paprika
1/2 Tsp Black Pepper

To plate:
Pitas
Tomato
Red Onion
Tzatziki 

Step 1: Mix together the marinade

In a ziplock or tupperware, mix together the red wine vinegar, olive oil, kosher salt, smashed garlic, oregano, paprika, and black pepper

Step 2: Trim and cube pork tenderloin

Trim off any excess fat or silver skin from your pork tenderloin.

Cube the tenderloin into appx 1 inch cubes

Toss the cubes into the marinade and leave in the fridge overnight.

Step 3: Skewer and Smoke

Skewer the pork cubes on metal or wood skewers

Smoke at 225 until the internal temp is appx 150-155.

Step 4: Plate and Enjoy

Plate these on a pita, with our homemade tzatziki, sliced tomato’s, and red onion strips
