Carolina Gold BBQ Chicken Drumsticks

Today we are smoking up some chicken, and making our very own homemade Carolina Gold BBQ sauce. I am using lollipop drumsticks for my chicken, but thighs, breasts, wings, or even whole chickens will work just as well! This tangy and sweet sauce works perfectly on chicken and if you have never had it, it really is worth the effort! Lets get started...

Ingredients:
Chicken Drumsticks
Kosher Salt
Water
Coarse Black Pepper
Garlic Powder

Carolina Gold BBQ Sauce

Step 1: Wet Brine the Chicken

Using a ratio of 1 Tbsp Kosher Salt to 1 Cup of Water, completely submerge your chicken.

Cover, and then put into the fridge and let it wet brine overnight

Step 2: Trim your Chicken

Thoroughly rinse of the wet brine.

Trim your chicken. For drums, take off anything funky, and any excess skin. If you want to butterfly your drums, cut about 2 inches up the bone all around and clean to bare bone.

Step 3: Rub down the chicken

Apply a light coat of coarse black pepper, and then garlic powder to all sides of the chicken.

If your chicken is overly dry, a layer of olive oil before the rub will help it adhere

Step 4: Mix up your BBQ Sauce

Set aside and allow to cool. You will want to reserve about half of the mix to use for dipping

Step 5: Smoke the chicken

Smoke the chicken at 225 for about an hour until the internal temp is around 140

Baste the chicken with your BBQ sauce

Bump the smoker up to 350

The goal is to smoke to about 165-180 degrees

Baste 2-3 more times with the BBQ sauce as the chicken comes up to temp

Serve with extra BBQ sauce for dipping!
