Smoked Philly Chicken Cheesesteak

Cheese steaks are always a hit, but sometimes going the full steak route isn’t what we are looking for. Enter the chicken philly cheese steak! Smoked chicken thighs make this an amazing backyard cook!

Ingredients:

  • 1 3/4 LB Boneless Chicken Thighs

  • 1 1/4 Tsp Kosher Salt

  • 1 Tsp Garlic Powder

  • 3/4 Tsp Coarse Black Pepper

  • 1/2 Tsp Chili Powder

  • 4 French Rolls

  • 2 Green Peppers

  • 4 Garlic Cloves

  • 1 Yellow Onion

Step 1: Chicken Prep

Cut off any off looking or stringy bits of the chicken and throw all into a large bowl.

Add in some olive oil and coat each piece.

Mix together the Salt, Garlic Powder, Black Pepper, and Chili Powder and slowly add to the chicken - make sure to coat all pieces and sides

Step 2: Smoke the Chicken

Preheat smoker to 225 degrees

Spread the chicken thighs out over the smoker and cook until internal temp of just over 160 (they will keep cooking)

Step 3: Prep the Veggies

Cut the peppers and onions into appx 1-2 inch by 1/2 inch rectangles, and mince up the garlic

Step 4: Sauté the vegetables

Add some butter or oil to a skillet, and sauté the peppers and onions until soft.

Add in the garlic and continue to sauté for a minute or two.

Step 5: Cut up the chicken and add to the skillet

Cut the chicken thighs to roughly the same shape and size of the vegetables and add to the skillet.

Put a healthy splash of Worcestershire sauce on the chicken, and combine

Step 6: Add Bread and Cheese

Move the mixture into multiple lines, about as long as your bread.

Coat the top of the lines with cheese

Cover the mix and cheese with French bread and let the cheese melt
