Smoker Pizza Bagel Bites

Is there a more nostalgic after school snack? Not for my money. This is one of my households new favorites and they are well worth the effort. Cook these up, pop on a 90s movie and have yourself a fantastic night!

Ingredients:

  • Cubed Cheddar Cheese

  • Cubed Monterrey Jack Cheese

  • Cubed Pepperoni

  • Marinara Sauce

Bagel Dough

  • 7.4g Active Yeast

  • 14g White Sugar

  • ~320ml Warm Water

  • ~440g 00 Pizza Flour

  • 3 Tbsp Salted Melted Butter

  • 1 Tsp Kosher Salt

Boiling Water

  • 2 Tbsp Brown Sugar

  • 1 Tbsp White Sugar

Step 1: Activate the Yeast

Mix the sugar, warm water, and active yeast together and set aside for 5 min.

Step 2: Mix up the dough

Combine half the flourwith the yeast mixture, salt, and butter

Slowely add in the remaining flour and using a dough hook, mix on medium speed for 5-10 minutes.

Once the dough is not sticky but spongey, return to the bowl and cover .

Let it rest for 6-12 hours.

Step 3: Shape the Bagels

Cut the dough into 45g balls. Slowly push a hole through them and set aside onto wax paper to rest

Step 4: Cube up the cheese and pepperoni

Cube the cheeses and pepperoni into small cubes. The smaller the better to get that iconic bagel bite look

Step 5: Boil the Bagels

Boil a pot of water with the white and brown sugar mixed in.

Slowly add bagels to the mixture and boil for 2 min on one side, and then flip and continue to boil for anotherminute

Step 6: Smoke the Bagels

Set the smoker to 350

Put the bagels (on wax paper or a silicon mat) onto the smoker

Cook for about 45 min or so until they stop being spongey and begin to crisp up

Step 7: Cut the bagels in half and return to the smoker

Once the exterior of the bagels has crisped up, remove them and cut each bagel in half. Return them to the smoker for another 10-15 minutes until the inside is also crispy

Step 8: Make the Bagel Bites

Put a spoonful of marinara on each bagel, and then cover in both types of cheese.

Top them each off with pepperoni and return to the smoker.

Once the cheese melts they are ready to pull!
