Grilled Polynesian Ostrich Kebabs

Sometimes you want to cook something up quickly. Thats where the propane grill shines. Sometimes you also want to get outside of your comfort zone and try a new type of meat…well Ostrich SHOULD be on your short list! It’s amazing just hot good this bird tastes, and you need to try it!

Ingredients:

12 Oz of Ostrich Steaks
Brown Sugar
3 Bell Peppers
1 White Onion
1/2 Pineapple cut into spears

Polynesian Marinade
2 Tbsp Pineapple Juice
2 Tbsp Soy Sauce
1 Tbsp Olive Oil
1/2 Tsp Lime Juice
1 Tbsp Honey
1/2 Tsp Ground Ginger
1/2 Tsp Garlic Powder
1/2 Tsp Coarse Black Pepper
1/4 Tsp Kosher Salt

Step 1: Marinade the Ostrich

Mix together the marinade and cover the ostrich

Marinade for 2 hours

Step 2: Prep the Vegetables and Fruit

Cut the onion, peppers, and pineapples into appx 1.5 inch squares.

Toss into a bowl and generously coat everything in olive oil

Toss in a little bit of kosher salt and black pepper

Step 3: Assemble the kebabs

Take the Ostrich out of the marinade (save the remaining marinade)

Cut the ostrich into appx 1.5 inch cubes

Assemble the kebabs similar to the above, by alternating ingredients until you have used up everything

Take the remaining marinade and toss in some brown sugar. Mix together

Step 4: Preheat grill to appx Medium heat

Put the kebabs on the grill and brush with the remaining marinade mixture

Keep rotating and rolling kebabs as they cook so no side burns

Cook until the ostrich has an internal somewhere between 140-150

Let it rest 10 minutes
