Smoked Asian Style Country Ribs

Country Ribs are really closer to a pork shoulder than actual ribs, but quite often can be found quite cheap at the store. This cut was made to be cooked low and slow to break down all of that connective tissue. Throw an asian marinade on there and these are a great cook!

Ingredients:
1.5 Lbs Pork Country Ribs

Asian Marinade:
1/2 Tsp 5 Spice Powder
1 Tsp Ground Ginger
1/4 Cup Brown Sugar
1/4 Cup Soy Sauce
1 Tbsp Rice Vinegar
1 Tbsp Olive Oil
2 Garlic Cloves
1 Tbsp Siracha
1/2 Tbsp Lime Juice
1/2 Tsp Salt

Corn Starch for thickening

For Garnish/Serving:
Hoisin Sauce
Sesame Seeds

Step 1: Marinade the Pork

Mix together the marinade in a zip-lock bag or a small dish and completely submerge the country ribs

Put the bag into the fridge overnight

SAVE THE MARINADE WHEN YOU REMOVE THE PORK - WE WILL USE IT LATER!

Step 2: Smoke the pork

Prep smoker to 225 degrees and put the pork on when it gets to temp

Smoke these for about 5 hours - looking for an internal temp of appx 190+ degrees (tender)

Step 3: Thicken up the sauce

Put the marinade in a saucepan and heat it up. Add in some corn starch slowly to get the sauce to thicken - I did appx 2tbsp

When the sauce cools down it will thicken even further

Begin basting the pork once it hits around 160 degrees internal until its ready to be pulled

Step 4:Serve

I served these with some white rice and broccolini. Drizzle a little bit of hoisin sauce and garnish with sesame seeds!
