Smoked Braided Pork Tenderloin

Pork Tenderloins are great to cook and always come out amazing. But what if there was a way to get more of your delicious rub or marinade onto the meat? Enter braiding! This creates more exterior surface area and really is surprising how much more rub you can get onto your meat!

Ingredients:

1.5 Lb Pork Tenderloin

The UFO BBQs Abduction Multi-Purpose BBQ Rub:
1/4 Cup Brown Sugar
2 Tbsp Paprika
1 Tsp Chili Powder
1/2 Tbsp Garlic Powder
1 Tsp Onion Powder
1/2 Tbsp Coarse Black Pepper
1 Tsp Ground Mustard

Guinness BBQ Sauce:
1.5 Cups Guinness
1/2 Tsp Kosher Salt
1 Cup Ketchup
1/2 Cup Apple Cider Vinegar
1/3 Cup Brown Sugar
3 Tbsp Worcestershire Sauce
1 Tsp Dry Mustard
1 Tsp Paprika
1 Tsp Garlic Powder
1/2 Tsp Chili Powder

Step 1: Trim the Tenderloin

Remove any excess fat or weird trimmings from the tenderloin

Step 2: Salt the Meat

Using a ratio of 1/2 Tsp per lb of trimmed meat. Completely cover the exterior of the tenderloin in kosher salt.

Place on a wire rack and put into the fridge until all of the salt is dissolved into the meat

Step 3: Cut the tenderloin into thirds

Remove the meat from the fridge and cut into equal length thirds (leave one end uncut)

Step 4: Rub all exposed sides of the tenderloin

Liberally rub down all exposed sides of the tenderloin, and shake off any excess

Step 5: Braid the strands of meat

Braid together the strands. To tie the finished product together, use a toothpick or a metal skewer

Return to the fridge until the smoker is pre-heated

Step 6: Smoke at 225 Degrees

Preheat smoker to 225 degrees

Place the tenderloin on the top rack

Smoke for 1 hour

After an hour, begin basting in the Guinness BBQ Sauce every 15 min or so

Let smoke until internal temperature is 135 degrees

Bump temp to 350 for 15 minutes

Let it rest 10-15 minutes
