Leftover Brisket Burnt Ends
Today we are using some leftover brisket to make one of the most popular foods in BBQ, the burnt ends! I always prefer brisket point when making my burnt ends, but if you have some leftover flat, throw that in as well! This is my favorite way to use my leftover brisket (when I have any), but you can take a whole brisket and cook it up specifically to make burnt ends! The pellet grill makes this super easy! Ingredients:
Leftover fully cooked Brisket point (or flat)
Dr. Pepper (or cherry coke)
Sweet BBQ Sauce
UFO BBQ Crop Circle Honey BBQ Rub
FAT - butter, tallow, ghee
Step 1: Cube your Brisket
First, fully defrost your brisket point (if needed)
Then cut into appx 1 inch cubes and move to a tray. We want to have enough room in between them for our bbq sauce to penetrate
Step 2: Mix together your sauce
Mix together your Dr. Pepper, sweet BBQ sauce, and rub.
The consistency we are looking for is pretty viscous. We want it to easily get in and coat all sides of our burnt ends.
Then pour it all over our brisket
Lastly add some fat on top. Butter, Ghee, or Tallow all will work great for this. I used a bunch of butter here
Step 3: Smoke at 225
Smoke for about 3 and a half hours
We are looking for the brisket to be super tender, and let some of the sugars start to caramelize
At this point we are done. You can serve immediately, or you can cover into a cooler or keep in an oven at 130ish until needed
