Asian Five Spice Spare Ribs

Today we are smoking up some spare ribs on our Weber Kettle Master Touch. I am using the slow and sear to get a perfect smoked rib! For flavoring we are going with a dry rub only, and going the Asian style route. These are not super sweet, but have an amazing complex flavor from those Chinese 5 spices! These are definitely one worth giving a try! Sound good? Lets get started...

Ingredients:
Rack of Pork Spare Ribs

2 Tsp White Sugar
1 Tsp Cumin
1 Tsp Paprika
1/4 Tsp Chili Powder
1 Tsp Black Pepper
1 Tsp Garlic Powder
1 Tsp Chinese 5 Spice

Kosher Salt

Step 1: Trim and salt spare ribs

Trim your spare ribs so you have an even sized rack

Remove the membrane as well.

Using a ratio of appx 1lb of meat to 1/2 Tsp Kosher Salt, completely salt the ribs

Move to the fridge to allow the salt to be completely absorbed

Step 2: Apply Dry Rub

Mix together your sugar, cumin, paprika, chili powder ,black pepper, garlic, and Chinese 5 spice

Completely coat the ribs in our rub, making sure to coat the sides

Step 3: Smoke at appx 250

Smoke at appx 250 degrees for about 3 hours, until the bark has set

At this point, begin to spritz any dry spots. I use hard apple cider usually

We are looking for the ribs to bend in half when held from the middle almost completely without breaking
