BBQ Pastry Squares

Try something new in the world of backyard finger food and appetizers. Puff pastry, cheese, BBQ sauce, sour cream, and a little leftover smoked meat make this one of my favorite appetizers!

Ingredients:
~1 Lb Pulled Pork (or chopped brisket, pulled chicken, etc)
1 Sheet of premade Puff Pastry
Your Favorite BBQ Sauce
1 Egg
Sour Cream
Cheddar Cheese (grated)

Step 1: Cut the Squares

Roll out the puff pastry onto a clean surface

Cut the sheets into appx 3x3 inch squares

Step 2: Assemble the pastries

Cut a circular hole in every other square using a 2.5 inch cup or a biscuit cutter

using an egg, brush the outer edges of a whole square

remove the circles from the cut squares and put the de-holed squares on top of the full squares.

using a tooth pick, poke the interior circle of the assembled squares

Step 3: Smoke/Bake the Pastries

Preheat the smoker to 375

Smoked the pastries on parchment paper for about 20 minutes, or until the expand a bit and start to puff up

Step 4: Fill the squares

Pull the pastries

Put down a layer of cheese followed by meat followed by more cheese and then top it all off with bbq sauce!


Step 4: Return to Smoker

Return the pastries to the smoker for 10-15 min until the tops become golden brown

Pull from the smoker

Drizzle with sour cream

Enjoy!
