Bacon Wrapped Brisket Stuffed Onion Rings

Bacon, Brisket, Onions, and cheese, paired with an amazing burger sauce, and you have a fantastic finger food for an appetizer or a main course! Definitely time to give these a try!

Ingredients:
1 LB Ground Brisket (or any ground meat)
2-3 Large White Onions
Kosher Salt
Black Pepper
Garlic Powder
Cheddar Cheese (grated/shredded)
Bacon (thin cut)

The UFO BBQ Burger Sauce

Step 1: Cut the Onions

Cut off the ends of the onions

Cut the onion into appx 1 inch circles

Step 2: Mix the ground meat

Mix the ground meat with garlic, kosher salt, black pepper, and shredded cheese to taste

Step 3: Assemble the Rings

Taking a large ring, begin stuffing the ground meat mixture around the edges.

Take a smaller ring, and press it into the middle of the circle, allowing an empty circle between the two rings.

Step 4: Wrap the Bacon

Using one strip of bacon at a time, slowly begin wrapping the entire ring in bacon.

It should take 2-3 strips per onion ring

Step 4: Smoke the rings

Smoke at 250 for appx an hour

Ten bump the temp to around 400 degrees

Cook to an internal temp of around ~160 (especially if using brisket) and when the bacon has crisped up

If you want, you can paint these in BBQ Sauce for additional flavor!
