Seared & Smoked Blackened Salmon

Salmon is one of my favorite fish, and blackened + smoked is one of my favorite ways to cook it. This is a pretty quick cook so its perfect for weekday nights!

Ingredients:
~1.5 Lb Salmon Filet
Olive Oil

Rub:
1 Tbsp Paprika
1 Tsp Kosher Salt
1 Tsp Onion Powder
1 Tsp Garlic Powder
1/4 Tsp Cayenne Pepper
1/2 Tsp Black Pepper
1/2 Tsp White Pepper
1/4 Tsp Thyme
1/4 Tsp Oregano

Step 1: Clean up the filet

Trim off any overly thin or funky parts of the filet

Coat the exterior (meat side) in olive oil

Step 2: Rub the Salmon

Mix together the rub ingredients

Completely coat the exterior of the salmon in the rub

Place back into the fridge (uncovered) for at least 30 min

Step 3: Sear the Salmon

Its time to sear the salmon. I use a sear gun but other options are an extremely hot grill or a cast iron pan

We want the exterior to blacken slightly and develop a harder exterior. With high heat this should be fairly quick, but the inside will be still raw

Step 4: Smoke the Salmon

Preheat the smoker to 180

I placed my salmon skin side down on peach paper (this makes removing the meat from the scales super easy)

Smoke until you get an internal of appx 140-145 degrees
