Smoked Prime Rib

Today we are smoking up a Prime Rib on our pellet smoker, before searing it off with our Sear Gun. Prime rib is a stable of holiday meals and is absolutely delicious. If you are looking for my favorite way to cook a prime rib, this is it! Adding some smoke flavor and a perfect sear, you cant go wrong!

Ingredients:
Bone in Prime Rib

Garlic Butter
1/2 Stick warm unsalted butter
4 Minced Garlic Cloves
Kosher Salt (1/2 to 1 tsp per lb of meat)
1 Tsp Olive Oil
1 Tsp Thyme
1 Tsp Ground Black Pepper

Step 1: Mix you Garlic Butter and Coat your Meat

Warm up your butter and mince your garlic. Add in the other ingredients and let it cool until just soft. Then completely coat down your cut of prime rib. Cover and leave in the fridge for a day or two.

Step 2: Smoke at 180 Degrees

Get your pellet grill up to 180 degrees

Smoke your meat as far away from the heat source as possible. With the bone facing towards the heat source.

Smoke for about 2 hours at 180 (total cook time will be 45 minutes or so per lb)

Target is about 110 degrees

Step 3: Remove and let it rest in tin foil

We want to pull off our meat and let it rest well before its at our target cooked temperature.

At the end of the sear you can always put it back in the oven, but you cant uncook a steak. So take it out, wrap it in foil and let it naturally rise in temp a few degrees.

Step 4: Sear it!

All steaks need a good sear. I use a sear gun here, but an oven broiler or a very hot grill will do the job.

We want quick hot and fast to not overcook the meat.

If, after searing its still not at your desired temp, you can put the seared steak back in a hot oven until its where you want.

Slice along the bone, and enjoy!
