Smoked & Fried Honey Siracha Chicken Wings
Step 1: Wet Brine the Wings
Using a ratio of 1 Cup water to 1 Tbsp Kosher Salt, Completely cover the wings in a ziplock and leave in fridge overnight
Step 2: Trim the Wings
Take the wings out of the ziplock and completely rinse them and then pat them dry
Using a sharp knife, separate the flats, drums, and tips
Step 3: Rub down the Wings
Lightly coat both sides of the wings in a layer of garlic powder, black pepper, and paprika
Step 4: Smoke the wings
Preheat the smoker to 180 degrees
Smoke for appx 2 hours
These will not be cooked through, we just want to get some smoke flavor onto these wings in this step
Step 5: Make the Wings Sauce
Melt the butter
Add in all of the sauce ingredients and return to the stove on low heat for 10 min or so
Allow to cool off
Step 6: Coat the wings
Lightly coat both sides of the wings in corn or potato starch
Step 7: Fry the wings
Fill a deep sauce pan with 1/2 to 1 inch of frying oil
Bring the oil to about 350 degrees
Fry one side of the wings until it gets the right color
Flip
Fry the other side
We are looking for the wings to cook here, but 180-190 degrees internal is just fine for wings!
Step 8: Sauce the wings
Put the fried wings into a bowl and coat them in the wing sauce
toss around to evenly coat
Garnish with sesame seeds (optional)
