Smoked Char Siu
I love Chinese food, and I love smoking and making my own BBQ. So it goes without saying, home made Char Siu on the pellet smoker is going to be something I really want to make. Check out how I do it here! I'm using a pellet grill, but just about any outdoor smoker will work with great results!

Ingredients:
~3.5 Lb Pork Butt (boneless)
Marinade (Chinese BBQ Sauce):
1/4 Cup Hoisin
1/3 Cup Soy Sauce
1/2 Cup Brown Sugar
2 Tbsp Honey
1/4 Cup Rice Wine Vinegar
1 Tbsp Sesame Oil
1/2 Tbsp Oyster Sauce (optional)
2 Tsp Chinese 5 Spice
1/2 Tsp Garlic Powder
1/2 Tsp Ginger
2 Tsp Red Food Coloring (optional)
Step 1: Put together the BBQ sauce
Mix together the ingredients
The food coloring is not necessary, but it will give the pork that traditional bright red look
Heat the mix on the stove and reduce slightly
Remove and let cool to room temp
Step 2: Trim the Pork Butt
Trim off any excess fat or silver skin from the pork butt
When choosing your cut, I recommend boneless, and one that is in more of a thick log than a flat piece
Step 3: Marinade the Pork
Put the pork into a bag, and pour over the bbq sauce
marinade 24-48 hours
Step 4: Smoke at 225
Put onto preheated smoker at 225
Smoke for about 3-4 hours or until internal temp is appx 150
