Honey Dijon Salmon

Honey Dijon or Honey Mustard works really well on Salmon. The flavors come together to make a a great cut of fish even better! Give this one a try when you do your next fish smoke! I am using a Pellet Smoker here, but the process should be the same on all smokers!

Ingredients:
~1.5 Lb Salmon Filet
Kosher Salt

Honey - Dijon:
2 Tbsp Honey
1 Tbsp Dijon Mustard
1 Tbsp Brown Sugar
1 Tbsp Butter (melted)
1/4 Tsp Apple Cider Vinegar

Step 1: Trim and Salt the Salmon

Cut off anything funky and pull out any visible pin bones.

Coat the exterior of the fish with kosher salt and let it rest in the fridge until absorbed

Step 2: Mix up the Honey-Dijon

Melt the butter, and combine all of the ingredients

Cool off in the fridge

Step 3: Paint the Fish

Take the marinaded chicken out of the zip lock and pour off any excess

One by one, completely coat each piece in potato starch

Put onto a wire rack, and then back into the fridge for an hour or two

Step 4: Smoke the Salmon at 225

Put the salmon on a square of peach paper or a cedar plank

Put onto the top rack of your smoker until internal temp of around 120

Bump temp to 350 and cook until 140-145 to crisp up the exterior
