Pulled Pork Loaded Twice Baked Potatoes

Twice Baked Potatoes are so good, and we can easily do them on our smoker! If you add in some bbq leftovers, you can take a reasonably boring side (baked potato) and turn it into one of your main course dishes!

Ingredients:
2 Russet Potatoes
1/2 Lb Cooked Pulled Pork
1/2 Cup Sour Cream
1/4 Cup Milk
2 Tbsp Salted Butter
1/4 Cup Green Onion
Head of Garlic
1/2 to 1 Cup grated cheese (Cheddar and Monterey Jack)
Chives to Garnish

Step 1: Prep and cook the potatoes

Wash the potatoes, and then completely cover in olive oil.

With a pork, carefully poke several holes into the skin of the potatoes

Sprinkle with salt

Cook on the smoker for appx 2.5 hours (until tender) at 250 degrees.

Step 2: Smoke the garlic

Cut the top off the garlic head, and lightly drizzle with olive oil

Place onto the smoker next to the potatoes for 45 min to an hour (until it turns a deep brown and each clove become soft

Step 3: Make the potato mix

Allow the potatoes to slightly cool

Scoop out the insides of the potatoes (carefully without breaking the skin)

add in the rest of our potato ingredients, but reserve some of the pulled pork and cheese (for topping)

Mash together

Step 4: Fill the potato skins

Scoop our mashed potato mixture back into each skin

Step 5: Bake the potatoes (again)

Smoke the potatoes at 350 for 20 minutes

Put pulled pork and remaining cheese on top and allow to cook for another 10-15 minutes

Step 6: Serve

Serve with Sour cream and chives!
