Brisket Stuffed Peppers

Are you looking for something to do with some leftover brisket? Look no further! Ground brisket stuffed peppers are always a hit, and this recipe is my favorite!

Ingredients:
3 Bell Peppers
1 LB Ground Brisket
1/2 White Onion
1 Cup Cooked Rice
1 Cup grated cheese (Cheddar and Monterey Jack)
3 Garlic Cloves

Taco Seasoning:
2 Tsp Paprika
1/2 Tsp Garlic Powder
1/2 Tsp Onion Powder
1/2 Tsp Cumin
1/4 Tsp Chili Powder
1/4 Tsp Oregano
1 Tsp Kosher Salt

Step 1: Mince Garlic and Onion

Mince half of an onion, and 3 cloves of garlic

Melt some butter in a pan, and brown the onions. Add in garlic and also brown for 30 seconds

Step 2: Add in ground brisket and brown

Add in the ground brisket, and break apart with a spatula. Brown the brisket completely.

Step 3: Add taco seasoning and water

Add all of the taco seasoning, and a 1/2 cup of water.

Bring the water to a boil, and allow it to simmer in the mix until it all evaporates

Step 4: Add cooked rice and cheese

Allow the meat mixture to cool slightly, and then add in the cooked white rice and shredded cheese.

Step 5: Prep peppers and stuff

Wash the bell peppers and then cut them lengthwise

Generously pack the meat mixture into each pepper half

Step 6: Smoke the stuffed peppers

Set the smoker at 275 and put the peppers onto the smoker.

Smoke for an hour

Top with a little bit of cheese 20 minutes after
