Pickle Back Wings

If you love pickles, then you need to try this recipe! We are wet brining the wings in pickle juice, before rubbing them down with my all purpose rub. Then smoking them nice and hot for a super crispy skin!

Ingredients:
~1-2lbs Chicken Wings (I used full and cut but pre sectioned ones work fine)
Pickle Juice - Dill

UFO BBQs Abduction Multi Purpose Rub (with salt)

Step 1: Trim and Section the wings

Trim off any excess skin or fat from the wings

I like to portion them but this isn’t completely necessary

Step 2: Wet Brine

Put the wings in a zip-lock bag and then pour your pickle juice over them

We dont want to over pickle them, so leave them submerged in the juice for about 3 hours

Step 3: Rub down the Wings

Take the chicken out of the pickle brine and pat them dry (dont want to rise these ones)

Coat the wings down in your rub of choice - my abduction rub (with salt) is a great choice here

Step 4: Smoke the wings

Preheat the smoker to 350 degrees

Smoke for 45-60 min

This should be enough to get them crispy and cook the through. Remember that wings can take a higher temp than breast meat!
