Butterflied Chicken Drumsticks

Lets face it, the cost of chicken wings has gotten way out of control. Today we are checking out the internet fad of butterflying chicken drumsticks. Is this method better than chicken wings? Maybe not, but if you like a meatier bite, these should be right up your alley and I definitely recommend giving them a try!

Ingredients:
~4-5 Chicken Drumsticks
Olive Oil
Kosher Salt

UFO BBQ Crop Circle Honey BBQ Rub (optional)

Honey Mustard (for dipping/optional)

Step 1: Trim and Butterfly the Drums

Cut off anything funky or excess fat from the Drums

To butterfly, cut along one side of the bone without going through the other side

Cut along the other side also not going through the bone.

This should allow the sides to spread out from the drum while still being held to the bone

Step 2: Salt the Chicken

Coat the meat and skin sides with some kosher salt, and move to a wire rack skin side UP

Put into the fridge for a few hours to held dry out the skin

Step 3: Apply Dry Rub

Coat the exterior of the chicken with a light layer of olive oil

Coat the chicken in your rub of choice (my honey bbq rub is great here, but even a simple garlic and pepper would be great)

Step 4: Smoke the Drums

Preheat the smoker to 180 degrees

Smoke for a few hours. We are just trying to get some smoke on these, we will finish them on the grill

Step 5: Grill them off

Get a propane grill or a charcoal grill going at a high temp

Toss the drums on and cook until they have cooked up - this is fairly quick

I serve mine with some honey mustard for dipping!
