Honey Mustard Chicken BLT

I love a good pub style sandwich and these Honey Mustard Chicken BLTs are about as good as it gets! Make these for the next game day and Iā€™m sure your guests will agree!

Ingredients:
Chicken Thighs - Appx 3 lbs or 8 thighs
Tomato
lettuce
Kings Hawaiian Buns
Cheddar Cheese

Milk Wash:
2 Cups Milk
1 Egg
1 Tbsp Kosher Salt
1 Tbsp Brown Sugar
Appx 2 Tbsp Siracha

Flour Mix:
1.5 Cups All Purpose White Flour
2 Tsp Lawrys
1/2 Tsp Kosher Salt
1 Tsp Onion Powder
1 Tsp Garlic Powder
1/2 Tsp Black Pepper

Honey Mustard

Step 1: Trim the Chicken Thighs

Trim off any excess fat and skin

If using bone-in thighs, remove the bone

Step 2: Milk/Egg wash the chicken

Mix together the milk and egg ingredients, and drop in the chicken thighs to completely cover

Put bowl into the fridge for 2-3 hours

Step 3: Mix together the Flour

Mix together all of the flour ingredients until evenly distributed

Step 4: Coat the Chicken

Take the chicken and drop into the flour bowl

Toss some more flour on top and move to a plate on the side

Once all have been coated, take the thighs one by one and drop back into the milk and then recoat in flour

Place onto a wire rack and put into the fridge for an hour

Step 5: Smoke at 350

Smoke at 350 for appx 30 minutes

During this step is a good time to make up your honey mustard here: Honey Mustard

Step 6: Smoke at 400

Bump the smoker up to 400 and begin spraying down the exterior in olive oil or butter

The goal here is just to crisp up the skin and get some nice color

(This is where I put my bacon on to cook)

Step 7: Assemble Sliders

Take the chicken off of the smoker and cover in tin foil while the bacon finishes

Here I toast the slider buns

Then put on a chicken thigh

a piece of bacon

A piece of cheddar cheese

Lettuce

Tomato

Honey Mustard
