Smoked BBQ Turkey Legs

If your family is anything like mine, you rarely cook up turkey outside of thanksgiving. Hopefully being able to make these amazing bbq turkey legs in your own backyard changes that!

Ingredients:
Uncured, unseasoned raw turkey legs

Wet Brine:
8 Cups Water
8 Tbsp Kosher Salt
5g Prague Powder 1 (about half a tsp)
1/2 Cup Brown Sugar
3 Cloves Garlic
1/2 Tbsp Whole Peppecorns
1 Tsp Mustard Seeds
3 Bay Leaves

The UFO BBQs Abduction Multi-Purpose BBQ Rub

Step 1: Wet Brine the Turkey

Mix together the wet brine and completely submerge the turkey legs

Brine for appx 12-24 hours

Remove from wet brine, completely rinse off any remaining brine and pat dry

Step 2: Dry rub the turkey legs

Coat the turkey legs in a light layer of olive oil

Coat the legs in your favorite bbq rub (use one without salt!!) - I used my UFO Abduction Rub

Step 3: Smoke at 225

Preheat the smoker to 225

Put the turkey legs on the top shelf until they hit around 165 (appx 4 hours)

At this point bump the temp to 350 and baste in butter to finish crisping up the skin

Step 4: Rest

Rest the turkey legs for 10-15 minutes in tin foil
