Smoked Stuffed Chicken Breasts

Today we are juicing up our Smoked Chicken Breasts with extra flavor! Stuffed with Spinach, Cheese, and finally breaded with a dry rub! Then smoked on a pellet smoker to give this dish great smoked flavor!

Ingredients:
4-5 Large Chicken Breasts
Hard Cheese of choice (I used garlic cheddar for extra flavor)
Panko Bread Crumbs
Eggs
Spinach

UFO BBQ’s Abduction Multi-Purpose BBQ Rub

Step 1: Prep the internal mix

Cube up the hard cheese

Mince the spinach

Mix together

Step 2: Prep the Chicken Breasts

Clean up any funky bits of skin or fat on the chicken

Carefully cut a slit into the thick side of the breast creating a deep pocket

Step 3: Stuff the Breasts

Stuff the spinach/cheese filling into the breasts and then push them closed. Ideally they should have a nice seam with a filled pocket in the chicken

Step 4: Bread the Breasts

Mix bread crumbs with your favorite rub

Whip up your eggs

One at a time, carefully dunk the breasts in the egg and then coat the breasts in the breadcrumb mixture

The trick here is to hold the breasts closed while coating in the egg and breadcrumbs

Put into the fridge for 30min to an Hour

Step 5: Smoke at 225

Smoke at 225 until an internal of 150-160. This will take a while, and your chicken will be perfectly safe to eat at 155 if it stays at that temp for at least 5 minutes. Appx an hour and a half cook time.
