Smoked Maple Salmon Bites

Brisket and pork belly burnt ends are a given fantastic finger food, but salmon bites should 100% be added to that list! These are so good that I find myself wanting to cook them up every week!

Ingredients:

  • ~1.5 lbs of Salmon Filets

Wet Brine Ingredients:

  • 4 Cups Water

  • 1/3 Cup Brown Sugar

  • 1/2 Cup Kosher Salt

  • 2 Tbsp Maple Syrup

  • 1 Tbsp Honey

Honey Maple Glaze:

  • 1 Cup Water

  • 2 Tbsp Unsalted Water

  • 1/2 Cup Brown Sugar

  • 5 Tbsp Maple Syrup

  • 2 Tbsp Honey

Step 1: Wet Brine the Salmon

Combine the wet brine ingredients

Add in the salmon skin side up.

Put in the fridge (covered) for 5 hours.

Step 2: Make the Maple Glaze

Combine ingredients for the maple glaze

heat over medium heat until reduced by appx 1/2. Set aside to cool

Step 3: Cube the Salmon

Rinse off the wet brine on the salmon.

Cut the salmon into appx 1 inch Cubes - remove the skin if still remaining!

Step 4: Smoke the Salmon Bites

Put salmon bites on a wire rack and onto the smoker at 180 Degrees

Brush on glaze every 30-45 min for appx 5 hours.

Temp we are looking for on the salmon is around 165 degrees
