Smoked Quail

Welcome to the Mothership! Today we are smoking some game birds on our pellet smoker. These quail are not wild birds, but this style of cooking will translate perfectly for all of you hunters. These birds have a very unique flavor, and paired with some subtle smoke make these something I highly recommend to everyone! Sound good? Lets get started...

Ingredients:
4 Quail

Wet Brine
1 Cup h20 to 1 Tbsp Koser Salt

Abduction Multipurpose Rub

Step 1: Clean up the birds and wet brine

Make sure the birds are free of any feathers or excess skin

Create your wet brine, and let the birds soak covered overnight

Completely rinse and pat them dry

Step 2: Smoke the Birds

Preheat your smoker to 225 degrees

Smoke your birds with the backbone towards the heat source

It should take appx 1.5 Hours. Smoke to 155 degrees.

Let them cool before cutting up
