Mexican Brisket - Chorizo Slider Burgers
Ingredients:
1 Lb Ground Beef (brisket)
1/2 Lb Ground Pork (shoulder)
Kings Hawaiian Slider Buns
Mexican Cheese Blend
Chorizo Seasoning
2 Tbsp Paprika
1 Tbsp Garlic Powder
1/2 Tbsp Chili Powder
2 Tsp Cumin
1 Tsp Oregano
1 Tsp Coriander
Dash of Cinnamon
1/2 Tsp Kosher Salt
Pico de gallo
2 Tomatoes
1/4 White Onion
1/4 or more Jalapeno (to taste)
~1/4 Cup Chopped Cilantro
Juice of half a lime
Salt and Pepper to taste
Cilantro Lime Crema
1/2 Cup Sour Cream
~1/4 Cup Cilantro
1-2 Garlic Cloves
Juice of 1 Lime
Step 1: Mix the ground meat
Mix together the ground beef and ground pork.
Add in the chorizo seasoning and completely mix together
Once fully mixed, move the bowl to the fridge (covered) for about an hour to rest
Step 2: Make the Pico de gallo

Step 3: Process the Cilantro Lime Crema

Step 4: Make the giant burger
Cover a large cutting board in saran wrap
Take the entire uncut “slab” of kings Hawaiian buns and place onto the board
Move the ground meat mixture ball to the center of where the buns would be
Carefully flatten the ball to create a large rectangle slightly larger than the area of the hawaiian buns
Step 5: Cook the burger
Using the saran wrap to move the giant burger. Move it to a skillet or grill and cook until done
Carefully cut the slab of hawaiian buns down the middle
Move the cooked burger onto the hawaiian buns
Step 6: Assemble the sliders
Layer on a mexican cheese blend, Then a layer of pico, and finally top the giant burger with the cilantro lime crema
Place the slider bun top back onto the sliders.
Cut alone the already perforated sliders to create the individual burgers
