Lemon Pepper Rub

This lemon pepper rub is incredible on all poultry. Specifically on wings! I find it tastes best completely fresh, but you can dry out the lemon zest if you want and it will keep stored for quite a while!

Ingredients:
2 Tbsp Lemon Zest (Appx 1 Large Lemon)
1/2 Tbsp Whole Black Peppercorns (crushed)
2 Tsp Garlic Powder
1/2 Tsp Onion Powder

This works best on wet brined chicken wings, but if you want to add salt, I would do about 1/2 to 3/4 Tsp of Kosher Salt with the above ingredients

Step 1: Zest your Lemon

Using a micro plane, carefully zest all of the yellow exterior of a large lemon.

Try not to get any of the white part as it has a bit of a bitter taste

Step 2: Crush the peppercorns

Using a mortar and pestle - or a hammer, or just about anything, crush a 1/2 tbsp of whole black peppercorns

Step 3: Mix

Mix all of the ingredients together. And you’re good to go!
