Fried Alligator Bites

Welcome to the Mothership! Today we are taking an Alligator tenderloin and frying it up Karaage style! If you have never had alligator, I highly recommend it. It tastes somewhere between fish and chicken but is very unique and super flavorful. We are going to take a Japanese style of frying known as Karaage, which uses potato starch to get a super crispy exterior. Sound good? Lets get started...

Ingredients:
Alligator Tail
Soy Sauce
Potato Starch
Frying Oil

Step 1: Cube the Alligator Tail

Pay the Alligator tail dry, and cut into one inch cubes. Trim off anything funky.

Step 2: Sauce and starch the bites

Coat the alligator in soy sauce.

Move directly to the potato starch, and coat all sides

Move the starched bites onto a wire rack. Move to your fridge while you prepare the oil.

Step 3: Heat the fry oil and fry the bites

My target cooking temp is 375 degrees, so I usually target 400 or so, since the added meat will bring down the temp.

My goal here is really just to get a nice fried color on the bites. They should cook relatively quickly.

Work in small batches, and fry all of the pieces

Let them rest for 10 min.
