Chili Lime Chicken Wings
Ingredients:
1.5 Lbs of separated Chicken Wings
Wet Brine Ingredients:
3 Cups Water
1/4 Cup Kosher Salt
1/3 Cup Brown Sugar
1 Tbsp Red Chili Flakes
1 Tbsp Black Pepper
Splash of Apple Cider Vinegar
Chili Lime Rub Ingredients:
1/2 Tbsp Chili Powder
1 Tbsp Fresh Lime Zest
1/2 Tsp Cumin
1/2 Tsp Garlic Powder
1/4 Tsp Onion Powder
1/4 Tsp Ground Coriander
1 Tsp Brown Sugar
1/8 Tsp Chipotle Pepper
1/2 Tbsp Paprika
Beer BBQ Ingredients
1.5 Cups Guinness (or any non hoppy beer)
1/2 Tsp Salt 1 Cup Ketchup
1/3 Cup Apple Cider Vinegar
1/3 Cup Brown Sugar
3 Tbsp Worcestershire Sauce
1 Tsp Dry Mustard
1 Tsp Paprika
1 Tsp Garlic Powder
1/2 Tsp Chili Powder
Step 1: Wet Brine the Wings
Combine all of the wet brine ingredients, making sure the salt and sugar are completely dissolved in the water.
Add in the chicken wings (you can trim off any weird pieces here) making sure that they are completely submerged
Cover with plastic wrap and put into the fridge for at least 12 hours
Step 2: Add Dry Rub
Rinse off the chicken wings removing any extra brine, and pat dry with paper towels.
Add wings to a zip lock bag and pour in the dry rub, making sure to coat all of the wings.
About an hour before smoking, take the wings out onto a wire rack in the fridge to keep drying out.
Step 3: Smoke Wings
Preheat smoker to 225 degrees and put wings evenly spaced on the top rack. smoke for appx 2 hours - to about 160 degrees
Bump temp as high as the smoker will allow and cook for 5-10 minutes to crisp up the skin
Step 4: Make the BBQ Sauce
Slowly combine the ingredients and simmer on the stove top until the sauce thickens - this should take about 15-20 min.
(Optional pro tip) : You can put the pan into the smoker if you want to add in some smoke flavor to the sauce
