BBQ Spring Rolls

This might be the perfect BBQ delivery system! Spring Rolls themselves don't leave much of a taste, so each bite is exclusively coleslaw, pulled pork, and bbq sauce in a finger food! These should be at every backyard BBQ!

Ingredients:
Spring Roll Wrappers
Pork Butt (mine was ~2.5lbs)
Whole Carrots
Whole Green Cabbage
BBQ Sauce - I used KC Style
Kosher Salt
Apple Cider
Yellow Mustard

Dry Rub - UFO BBQ SuperNova Coffee Rub

Step 1: Prep and Cook your meat

I used pulled pork. I have a full recipe on pulled pork here, but any bbq meat will work well (especially leftover brisket)

Step 2: Prep Carrots and Cabbage

Fully wash, and then peel the carrots

Cut the carrots to matchstick size, and thinly cut up the cabbage to match

Step 3: Place filling into spring roll

Moisten the spring roll wrappers as per the boxes instructions

Place a layer of pulled pork in the center leaving 2 inches on either side

In the same direction, add in some carrots and cabbage

Generously coat the center with BBQ Sauce

Step 4: Roll up the rolls

Fold in the sides of the spring roll wrappers

Starting at the bottom slowly roll up the ingredients to form a log

Repeat for all of your ingredients

Serve with extra BBQ sauce for dipping!
